But keep an eye beyond the capital: Negombo and the coast lean into seafood, Jaffna and Kandy host fairs built around local produce, and the festive stretch from December through April Avurudu brings kavum, kokis and Christmas markets in quick succession.

Most food fairs are free to walk into, with stalls charging as you eat, while ticketed tastings and supper clubs tend to seat only a few dozen people.
